📝 INGREDIENTS
For the Prime Rib Roast
- 1 prime rib roast (also called standing rib roast), 5–7 lbs
- 3 tbsp olive oil
- 3 tbsp soft butter
- 1 tbsp salt (sea salt or kosher salt)
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp paprika
- 2 tsp dried thyme
- 2 tsp dried rosemary
- 2 tsp dried parsley
- 6–8 cloves fresh garlic, minced
For the Herb Crust
- ¼ cup soft butter
- 2 tbsp olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp minced garlic
For Serving (Optional)
- Au jus gravy
- Horseradish cream sauce
🔥 FULL INSTRUCTIONS
✅ 1. Prepare the Prime Rib Roast
- Remove roast from refrigerator 2 hours before cooking (room temp).
- Pat dry with a paper towel.
- Rub roast with olive oil and soft butter.
- Mix salt, pepper, garlic powder, onion powder, paprika, thyme, rosemary, parsley.
- Rub seasoning mixture all over the roast (sides, top, bottom).
- Press minced fresh garlic onto the outside.
✅ 2. Prepare Herb Butter Crust
- Mix butter, olive oil, rosemary, thyme, parsley, garlic.
- Spread generously over the entire roast.
- Place roast fat-side up in roasting pan (very important).
✅ 3. High-Heat Sear in Oven
- Preheat oven to 230°C / 450°F.
- Roast at high heat for 20 minutes to create crust.
✅ 4. Slow Roast Until Perfect
- Reduce oven to 120°C / 250°F.
- Cook until desired internal temperature (use meat thermometer):
Internal Temperature Guide
- Rare: 48–50°C (118–122°F)
- Medium-Rare (recommended): 54–57°C (130–135°F)
- Medium: 60–63°C (140–145°F)
💡 A 6-lb roast usually takes 2–2.5 hours at low temperature.
✅ 5. Resting the Prime Rib
VERY IMPORTANT:
- Remove roast from oven.
- Tent loosely with foil.
- Let rest 20–30 minutes.
- Temperature will rise another 3–5°C while resting.
This makes the meat extremely juicy.
✅ 6. Slice & Serve
- Remove bones if attached (they slide off easily).
- Slice thick cuts (just like in the picture).
- Serve with:
- au jus
- horseradish sauce
- mashed potatoes
- roasted vegetables
