Ingredients:
- 4 white fish fillets (cod, tilapia, halibut, or sea bass)
- 2 tbsp olive oil
- 1 lemon, thinly sliced
- 1 small red onion, thinly sliced
- 1 bell pepper (red or yellow), sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, pitted and halved
- 2–3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped, for garnish
- Optional: 1/4 cup feta cheese, crumbled
Instructions:
- Preheat Oven:
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish with 1 tbsp olive oil.
- Prepare Vegetables:
- In a bowl, combine cherry tomatoes, bell pepper, onion, garlic, olives, oregano, thyme, salt, and black pepper.
- Toss with 1 tbsp olive oil until coated.
- Assemble the Dish:
- Place fish fillets in the prepared baking dish.
- Arrange vegetables evenly around and on top of the fish.
- Lay lemon slices over the fish fillets.
- Bake:
- Bake in the preheated oven for 18–25 minutes, depending on fish thickness, until fish flakes easily with a fork.
- Serve:
- Sprinkle with fresh parsley and crumbled feta cheese (if using).
- Serve immediately with rice, couscous, or crusty bread.
