🍍 Pineapple Delight Dessert Recipe (No-Bake Creamy Pineapple Cheesecake Bars)

Ingredients

For the Crust:

  • 2 cups crushed digestive biscuits (or graham crackers)
  • ½ cup melted butter
  • 2 tbsp granulated sugar

For the Creamy Filling:

  • 1 cup cream cheese, softened
  • 1 cup cold heavy whipping cream
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

For the Topping:

  • 1½ cups pineapple chunks (fresh or canned, well-drained)
  • 2 tbsp pineapple syrup or juice
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the crust:
    • Mix crushed biscuits, melted butter, and sugar in a bowl.
    • Press the mixture firmly into the bottom of a baking dish (8×8 inch).
    • Chill in the fridge for 15–20 minutes to set.
  2. Make the creamy filling:
    • In a bowl, beat the cream cheese until smooth.
    • Add condensed milk, vanilla extract, and lemon juice; beat until creamy.
    • In another bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble the dessert:
    • Spread the creamy filling evenly over the chilled crust.
    • Arrange pineapple chunks on top and drizzle with a bit of pineapple juice for flavor.
  4. Chill:
    • Refrigerate for at least 4 hours (overnight for best texture).
    • Slice and serve cold, garnished with mint leaves.

Tips:

  • For extra flavor, add a layer of crushed pineapple between the filling and topping.
  • You can use coconut flakes or white chocolate shavings for a tropical touch.
  • Store leftovers in the refrigerator for up to 3 days.
