Ingredients
For the Crust:
- 2 cups crushed digestive biscuits (or graham crackers)
- ½ cup melted butter
- 2 tbsp granulated sugar
For the Creamy Filling:
- 1 cup cream cheese, softened
- 1 cup cold heavy whipping cream
- 1 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1 tbsp lemon juice
For the Topping:
- 1½ cups pineapple chunks (fresh or canned, well-drained)
- 2 tbsp pineapple syrup or juice
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the crust:
- Mix crushed biscuits, melted butter, and sugar in a bowl.
- Press the mixture firmly into the bottom of a baking dish (8×8 inch).
- Chill in the fridge for 15–20 minutes to set.
- Make the creamy filling:
- In a bowl, beat the cream cheese until smooth.
- Add condensed milk, vanilla extract, and lemon juice; beat until creamy.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Assemble the dessert:
- Spread the creamy filling evenly over the chilled crust.
- Arrange pineapple chunks on top and drizzle with a bit of pineapple juice for flavor.
- Chill:
- Refrigerate for at least 4 hours (overnight for best texture).
- Slice and serve cold, garnished with mint leaves.
