Slow Cooker Creamy Cheeseburger Soup

Ingredients

  • 1 lb (450 g) ground beef
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cups peeled and diced potatoes
  • 3 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Instructions

  1. Brown the Ground Beef
    In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the cooked beef to the slow cooker.
  2. Add Vegetables and Seasonings
    To the slow cooker, add diced onions, carrots, celery, potatoes, chicken broth, garlic powder, basil, parsley, salt, and pepper. Stir well to combine.
  3. Cook in Slow Cooker
    Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the vegetables are tender and the potatoes are soft.
  4. Prepare the Creamy Base
    In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes until bubbly. Slowly add milk, whisking constantly, until smooth and thickened.
  5. Combine Everything
    Pour the milk mixture into the slow cooker and stir well. Add shredded cheddar cheese and sour cream. Mix until the cheese melts and the soup becomes creamy.
  6. Serve and Enjoy
