Ingredients

  • 1 lb (450 g) smoked sausage or kielbasa, sliced into ½-inch rounds
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced (optional but recommended)
  • 2 cups (480 g) sauerkraut, drained (rinse lightly for milder flavor)
  • ½ cup (120 ml) chicken broth or beer
  • 1 tbsp Dijon mustard
  • ½ tsp caraway seeds (optional, for authentic flavor)
  • Salt and black pepper to taste
  • 1 tbsp brown sugar (optional, for a touch of sweetness)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Sausage:
    Heat olive oil in a large skillet over medium heat.
    Add sliced sausage and cook for 5–7 minutes until browned on both sides.
    Remove and set aside.
  2. Sauté the Vegetables:
    In the same skillet, add onions and garlic.
    Cook until soft and fragrant (about 3 minutes).
    If using potatoes, add them now and cook for another 10 minutes, stirring occasionally, until lightly golden.
  3. Add the Sauerkraut and Flavorings:
    Stir in sauerkraut, Dijon mustard, caraway seeds, and brown sugar.
    Pour in chicken broth or beer to deglaze the pan.
    Mix well and simmer for 5 minutes.
  4. Combine and Simmer:
    Return the browned sausage to the skillet.
    Stir everything together, cover, and simmer for 10–15 minutes, allowing flavors to blend beautifully.
  5. Finish and Serve:
    Taste and adjust seasoning with salt and pepper.
    Garnish with fresh parsley before serving.
