Christmas Chaos Cake

Ingredients

For the Christmas Chaos Cake Batter

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 cup sour cream (for extra moisture)
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup chopped cranberries (fresh or dried)
  • 1 cup white chocolate chips
  • ½ cup crushed candy canes
  • ½ cup gingerbread cookie crumbs

For the Vanilla Cream Cheese Frosting

  • 1 ½ cups butter, softened
  • 12 oz cream cheese, softened
  • 5–6 cups powdered sugar
  • 1 tbsp vanilla extract
  • 2–3 tbsp heavy cream
  • Pinch of salt

For the Christmas Chaos Toppings

  • Extra crushed candy canes
  • Extra gingerbread cookie crumbs
  • Holiday sprinkles
  • White chocolate shavings
  • Optional: caramel drizzle, cranberry sauce drizzle, or melted chocolate

Instructions

1. Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C).
  2. Grease two 9-inch cake pans and line with parchment.
  3. Cream butter + sugar + brown sugar until fluffy.
  4. Add eggs one at a time.
  5. Mix in vanilla, buttermilk, and sour cream.
  6. In a separate bowl, whisk:
    • flour
    • baking soda
    • baking powder
    • salt
    • cinnamon
    • nutmeg
    • ginger
  7. Combine wet and dry ingredients.
  8. Gently fold in:
    • cranberries
    • white chocolate chips
    • crushed candy canes
    • gingerbread crumbs
  9. Divide batter into cake pans.

2. Bake

  • Bake 30–38 minutes until toothpick comes out clean.
  • Let cakes cool completely before frosting.

3. Make the Frosting

  1. Beat butter and cream cheese until creamy.
  2. Add powdered sugar gradually.
  3. Add vanilla, salt, and heavy cream.
  4. Beat until fluffy, smooth, and spreadable.

4. Assemble the Christmas Chaos Cake

  1. Place first cake layer on a plate.
  2. Spread a thick layer of vanilla cream cheese frosting.
  3. Optional: drizzle caramel or cranberry sauce.
  4. Add second cake layer.
  5. Frost entire cake generously.

5. Add the “CHAOS” Decorations

Load the top with:

  • crushed candy canes
  • gingerbread crumbs
  • white chocolate curls
  • red & green sprinkles
  • mini marshmallows
  • extra drizzle (caramel, chocolate, or white chocolate)
