Ingredients
2 cups cottage cheese (full-fat or low-fat)
1/4 cup plain Greek yogurt (for extra creaminess)
2 green onions, finely chopped
1/4 cup finely shredded carrot
2 tbsp finely chopped fresh parsley or dill
1 small garlic clove, minced (or 1/2 tsp garlic powder)
1 tbsp lemon juice
1/2 tsp onion powder
Salt & black pepper to taste
Optional: pinch of paprika or red pepper flakes for mild heat
Instructions
Blend the base
Add cottage cheese and Greek yogurt to a food processor or blender. Blend until smooth and creamy.
Mix in veggies & seasoning
Transfer to a bowl. Stir in green onions, carrot, herbs, garlic, lemon juice, onion powder, salt, and pepper.
Chill (recommended)
Refrigerate for at least 30 minutes to let flavors develop.
