Creamy Shrimp and Rice Comfort Bowl

Ingredients:

1 lb shrimp (peeled and deveined)
1 cup rice (white or brown, your choice)
1 cup coconut milk
1 cup chicken broth
1 small onion, chopped
1 clove garlic, minced
1 bell pepper, chopped
1/2 cup spinach (or any greens)
1/2 cup diced tomatoes
2 tbsp olive oil
1 tsp paprika
1/2 tsp cayenne pepper (optional)
Salt and pepper to taste
Instructions:

Heat olive oil in a large pan over medium heat. Add the chopped onions and garlic, sautéing for 3-4 minutes until softened.
Add the bell pepper, spinach, and diced tomatoes. Stir everything together and let cook for another 3-4 minutes.
Stir in the rice, paprika, cayenne, and salt and pepper. Mix everything well.
Add the coconut milk and chicken broth to the pan. Bring to a simmer, cover, and let cook for about 15 minutes, or until the rice is tender and the liquid has mostly absorbed.
While the rice is cooking, sauté the shrimp in a separate pan with a little olive oil until they turn pink, about 3 minutes per side.
Once the rice is done, stir in the cooked shrimp and adjust the seasoning to taste.
