Low-Carb Bacon Cheeseburger Casserole

Ingredients

Beef Layer

  • 1½ lbs ground beef
  • 1 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 2 tbsp low-carb ketchup
  • 1 tbsp yellow mustard

Bacon Layer

  • 8 slices thick-cut bacon, cooked crispy and crumbled

Cheese Layer

  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese (optional for extra melt)

Egg Custard Layer (Keto Binder)

  • 4 large eggs
  • ½ cup heavy cream
  • 2 tbsp low-carb ketchup
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • Salt & pepper to taste

Optional Toppings (Low-Carb Friendly)

  • Sliced pickles
  • Chopped tomatoes
  • Green onions
  • Extra bacon
  • Extra cheese

🍔 Instructions

1. Preheat Oven

  • Preheat to 350°F (175°C).
  • Grease a 9×13 casserole dish.

2. Cook the Bacon

  • Fry bacon until crispy.
  • Drain on paper towels and crumble.
  • Set aside.

3. Cook the Beef Mixture

  • Heat oil in a large skillet.
  • Add diced onion; sauté until softened.
  • Add garlic; cook 1 minute.
  • Add ground beef; cook until browned.
  • Stir in salt, pepper, Worcestershire, low-carb ketchup, and mustard.
  • Let simmer 2–3 minutes for flavor.
  • Transfer the cooked beef mixture into the casserole dish.

4. Add Bacon + Cheese

  • Sprinkle crumbled bacon evenly over the beef.
  • Add 1½ cups cheddar cheese over the top.
  • (Reserve remaining cheese for the final topping.)

5. Make the Keto Egg Custard

  • In a bowl, whisk eggs, heavy cream, ketchup, Dijon mustard, garlic powder, onion powder, paprika, salt & pepper.
  • Blend until smooth.

6. Pour Custard Over Casserole

  • Pour the egg mixture evenly over beef, bacon, and cheese.

7. Add Final Cheese Layer

  • Sprinkle the remaining cheddar and mozzarella on top.

8. Bake

  • Bake 25–30 minutes, until set and golden and cheese is bubbling.

🍽️ Serve

Let cool 10 minutes. Slice into squares.
Top with sliced pickles, tomatoes, green onions, or extra bacon.

  • Add sautéed mushrooms or jalapeños for flavor without carbs.
