Sheet Pan Chicken with Roasted Potatoes and Green Beans

🍗🥔🥬 Ingredients

For the Chicken

  • 4 bone-in chicken thighs or chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp dried thyme or rosemary

For the Roasted Potatoes

  • 700 g (1½ lb) baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

For the Green Beans

  • 400 g (14 oz) fresh green beans, trimmed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Optional Garnish

  • Fresh parsley
  • Lemon wedges
  • Grated Parmesan cheese

🍳 Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 200°C / 400°F.
  2. Line a large sheet pan with parchment paper or foil.

Step 2: Season the Potatoes

  1. In a bowl, toss potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  2. Spread potatoes evenly on one side of the sheet pan.
  3. Roast for 20 minutes to give them a head start.

Step 3: Season the Chicken

  1. Pat chicken dry with paper towels.
  2. Rub with olive oil, salt, pepper, paprika, garlic powder, Italian seasoning, and thyme.

Step 4: Add Chicken & Green Beans

  1. Remove sheet pan from oven.
  2. Push potatoes to one side and add the seasoned chicken.
  3. Toss green beans with olive oil, salt, and pepper.
  4. Add green beans to the remaining space on the pan.

Step 5: Roast Everything Together

  1. Return pan to oven.
  2. Roast for 25–30 minutes, until:
    • Chicken is cooked through (internal temp 165°F / 74°C)
    • Potatoes are golden and crispy
    • Green beans are tender and slightly charred

Step 6: Finish & Serve

  • Garnish with fresh parsley
  • Squeeze lemon juice over chicken for extra flavor
  • Sprinkle with Parmesan if desired
