For the Chicken
- 4 bone-in chicken thighs or chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp dried thyme or rosemary
For the Roasted Potatoes
- 700 g (1½ lb) baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
For the Green Beans
- 400 g (14 oz) fresh green beans, trimmed
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
Optional Garnish
- Fresh parsley
- Lemon wedges
- Grated Parmesan cheese
🍳 Instructions
Step 1: Preheat & Prepare
- Preheat oven to 200°C / 400°F.
- Line a large sheet pan with parchment paper or foil.
Step 2: Season the Potatoes
- In a bowl, toss potatoes with olive oil, salt, pepper, paprika, and garlic powder.
- Spread potatoes evenly on one side of the sheet pan.
- Roast for 20 minutes to give them a head start.
Step 3: Season the Chicken
- Pat chicken dry with paper towels.
- Rub with olive oil, salt, pepper, paprika, garlic powder, Italian seasoning, and thyme.
Step 4: Add Chicken & Green Beans
- Remove sheet pan from oven.
- Push potatoes to one side and add the seasoned chicken.
- Toss green beans with olive oil, salt, and pepper.
- Add green beans to the remaining space on the pan.
Step 5: Roast Everything Together
- Return pan to oven.
- Roast for 25–30 minutes, until:
- Chicken is cooked through (internal temp 165°F / 74°C)
- Potatoes are golden and crispy
- Green beans are tender and slightly charred
Step 6: Finish & Serve
- Garnish with fresh parsley
- Squeeze lemon juice over chicken for extra flavor
- Sprinkle with Parmesan if desired
