For the Creamy Spaghetti
- 250 g (8 oz) spaghetti pasta
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp nutmeg (optional, but recommended)
- ¼ cup reserved pasta water
🍝 Instructions
Step 1: Cook the Spaghetti
- Bring a large pot of salted water to a rolling boil.
- Add spaghetti pasta and cook until al dente according to package instructions.
- Reserve ¼ cup pasta water, then drain the pasta and set aside.
Step 2: Make the Creamy Spaghetti Sauce
- In a large pan over medium heat, melt 2 tbsp butter.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream, stirring constantly.
- Add salt, black pepper, and nutmeg.
- Stir in Parmesan cheese until the sauce becomes smooth and creamy.
- Add the cooked spaghetti and a splash of reserved pasta water.
- Toss until the spaghetti is fully coated in the creamy garlic Parmesan sauce.
- Remove from heat and keep warm.
Step 3: Sear the Steak Bites
- Pat the steak cubes dry with paper towels.
- Season with salt, pepper, paprika, and chili flakes.
- Heat olive oil in a heavy skillet over high heat.
- Add steak bites in a single layer (do not overcrowd).
- Sear for 2–3 minutes per side until browned and juicy.
Step 4: Garlic Butter Finish
- Reduce heat to medium-low.
- Add butter and minced garlic to the pan.
- Stir steak bites in the sizzling garlic butter for 30–60 seconds.
- Sprinkle with fresh parsley and remove from heat.
