Soft and Fluffy Bread Recipe

Ingredients:

  • 3 ½ cups (440g) all-purpose flour or bread flour
  • 2 ¼ tsp (7g) active dry yeast (1 packet)
  • 1 cup (240ml) warm milk (about 110°F / 43°C)
  • 2 tbsp (30g) sugar
  • 1 tsp salt
  • 3 tbsp (45g) unsalted butter, softened
  • 1 egg, room temperature
  • 2 tbsp (30ml) warm water (for yeast activation)
  • Optional: 1 tbsp melted butter (for brushing after baking)

Instructions:

1. Activate the Yeast:

  • In a small bowl, mix warm water, sugar, and yeast.
  • Let it sit for 5–10 minutes until frothy. This means the yeast is active and ready.

2. Prepare the Dough:

  • In a large mixing bowl, combine flour and salt.
  • Make a well in the center and add warm milk, egg, butter, and the activated yeast mixture.
  • Mix with a wooden spoon or dough hook until the dough starts to form.

3. Knead the Dough:

  • Knead on a floured surface for 8–10 minutes (or with a stand mixer for 6–8 minutes) until smooth and elastic.
  • If the dough is sticky, add a tablespoon of flour at a time — it should be soft, not dry.

4. First Rise:

  • Place dough in a greased bowl, cover with a damp cloth or plastic wrap.
  • Let it rise in a warm place for 1 to 1½ hours, or until doubled in size.

5. Shape the Loaf:

  • Punch down the dough to release air.
  • Roll it into a rectangle, then tightly roll it into a loaf shape.
  • Place in a greased 9×5-inch (23×13 cm) loaf pan.

6. Second Rise:

  • Cover and let the dough rise again for 30–45 minutes, or until it has risen just above the pan’s rim.

7. Bake:

  • Preheat oven to 350°F (175°C).
  • Bake for 25–30 minutes until the top is golden brown.
  • Internal temperature should reach 190°F (88°C).

8. Finishing Touch:

  • Remove from oven and immediately brush the top with melted butter for a shiny, soft crust.
  • Cool on a wire rack before slicing.

  • Use whole milk for richer flavor and softer texture.
  • Knead well — proper gluten development gives structure and fluffiness.
  • Don’t overbake — golden top and soft interior are the goal.
