Stove Top Stuffing Meatloaf

Ingredients:
2 pounds lean ground beef
1 small onion, finely diced
1 box (6 oz) Stove Top stuffing mix
1 cup water
2 large eggs
1/2 cup milk
1/4 cup ketchup
1 teaspoon garlic powder
1/2 teaspoon black pepper
Optional Topping:

1/3 cup ketchup
2 tablespoons brown sugar
1 teaspoon mustard
Instructions:
Preheat Oven:
Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet.
Prepare Stuffing:
In a bowl, combine the stuffing mix with 1 cup hot water. Let it sit for 5 minutes to soften.
Mix Ingredients:
In a large bowl, combine ground beef, diced onion, softened stuffing, eggs, milk, ketchup, garlic powder, and black pepper. Mix gently until just combined.
Shape the Meatloaf:
Transfer the mixture to the prepared pan and shape into a loaf.
Add Topping (Optional):
In a small bowl, mix ketchup, brown sugar, and mustard. Spread evenly over the top of the meatloaf.
Bake:
Bake for 50–60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Do not overmix to keep the meatloaf tender.
You can substitute ground turkey for a lighter version.
Leftovers store well in the refrigerator for up to 3 days.
